1/4 cup canola oil
1 medium...Indonesian Fried Rice<br /><br />1/4 cup canola oil<br />1 medium yellow onion, chopped<br />2 tsps curry powder<br />1/2 tsp turmeric<br />1 tsp finely minced ginger root OR<br />1/2 tsp ground ginger<br />1/2 tsp crushed red pepper flakes<br />1 1/2 cups long grain rice<br />3 cups hot chicken stock<br />1 1/2 tbs molasses<br />3 tbs soy sauce<br />1/2 cup chopped roasted peanuts<br />1 cup cooked chicken<br />2 green onions, chopped<br />1/3 cup green peas, cooked<br />1/2 cup raisins<br /><br />plain yogurt<br /><br />1) Heat oil in a large pot. Add onion, curry, turmeric, ginger, and red pepper flakes, and saute for 5 mins.<br />2) Add rice. Saute 5 mins.<br />3) Add stock. Bring to boil, then reduce heat, cover, and cook on low for 20 mins.<br />4) Stir in molasses and soy. When she was done she said all of the sudden she was sick so she had to lie down. He husband came in to check on her and ask what was wrong. She didn't want to say, so she said she just did not feel well. She said he brought her aspirins and she said she had to take them or confess. Yes, the pink slime ones. <br /><br />This rice reminds me of a dish from my mom's own ethnic dish library (however limited it was)--Indonesian Fried Rice. Gurll.
